A delicious and colourful pesto to serve as a starter or to put on pasta…
Ingredients (for 6 people):
- Beetroot 3,5 oz
- Purple cabbage 17,5 oz
- 1 tablespoon tahini
- 1 coffeespoon of salt
- 1 garlic
- Lemon juice
- extra virgin olive oil
Steps:
- Steam the beetroot for about 10 min
- Cut the purple cabbage and stew it with some extra virgin olive oil and one garlic
- In a mixer put the purple cabbage (without the garlic), the beetroot and add 1 tablespoon of tahini, 1 coffeespoon of salt, the juice of 1 lemon and extra virgin olive oil (about 1,2 oz). You have to obtain a very smoothe cream
- Serve it with some bread
