How to make different, the usual vegetables…With a little bit of creativity we can make a tasty, colored cream to replace a classic “pinzimonio”. With few ingredients a simply and fast recipe with the scent of mint leaves and lemon, flavoured with salted capers from La Nicchia di Pantelleria.
Ingredients:
- 1 barbabietola rossa media
- 10 capperi di Pantelleria sotto sale
- 1 cucchiaino di tahina
- 6 foglioline di menta
- 20 gr di olio extravergine di oliva
- succo di 1 limone
- 2 cucchiai di tofu vellutato
- 1 cucchiaio di succo d’agave
Steps:
- Cut the beetroot into thin slices and steamed it for about 10 minutes.
- Blend the beetroot and all the other ingredients to obtain a smoothe cream: serve it with raw, fresh and seasonal vegetables.
