Another recipe remembering India: naan, a very simple dough, rolled out like piadina, but baked enriched with sesame seeds. Finally seasoned with ghee (http://www.gustovegetariano.com/en/clarified-butter-ghee/). I find naan a very nice alternative to bread. Easy and fast to prepare, can be consumed warm as an appetizer or together with legumes and vegetables.
I have already told you that in some part of the year, I have the habit to follow a gluten-free diet: corn and rice cakes are quite gratifying, as substituted of bread… I like the crunchy noise they make when you bite them. But I’m always looking for new recipes, made with gluten-free flours. This is a nice alternative to rice and corn cakes: crispy quinoa crackers with mixed seeds 🙂
In some periods of the year I try to avoid some foods I use to eat too much: this recipe is very successfull when I don’t eat yeats for few weeks….it’s a way to have a balanced diet. This piadina doesn’t contain yeats and also animal fats: infact I use only extra virgin olive oil. It is a very fast and simply preparation. You can serve it with some salted cream, like hummus, or you can use it to make vegetarian rolls with vegetables and cheese. My son likes very much the sweet version with a hazelnut’s cream.
