Ingredients:
- colored chard sticks
- some mint fresh leaves
for the emulsion:
- 1 orange (only juice)
- extra virgin olive oil q.s.
- 1 coffee spoon of mustard
- salt q.s.
- pepper q.s.
- 1 pinch of red chilli powder

Steps:
- Cut the chard sticks and cook them in abundant boiling water for 2/3 minutes; cool immediately in a bowl with water and ice.
- Prepare the emulsion mixing all the ingredients in an airtight jar; shake it for a few seconds to get a spicy sauce.
- Season the sticks and serve with some mint leaves.
