A delicious and colourful pesto to serve as a starter or to put on pasta…

Ingredients (for 6 people):

  • Beetroot 3,5 oz
  • Purple cabbage 17,5 oz
  • 1 tablespoon tahini
  • 1 coffeespoon of salt
  • 1 garlic
  • Lemon juice
  • extra virgin olive oil

Steps:

  1. Steam the beetroot for about 10 min
  2. Cut the purple cabbage and stew it with some extra virgin olive oil and one garlic
  3. In a mixer put the purple cabbage (without the garlic), the beetroot and add 1 tablespoon of tahini, 1 coffeespoon of salt, the juice of 1 lemon and extra virgin olive oil (about 1,2 oz). You have to obtain a very smoothe cream
  4. Serve it with some bread
